Jan. 30, 2025 - At the beginning of the Fall semester, Campus Dining announced a plan
to launch a new franchise restaurant, Wild Blue Sushi, at the Student Union Building
alongside Ekho’s Cafe. We understand the importance of having healthy options, as
highlighted by the dining and focus groups coordinated by the Associated Students
Inc. – Student Government and Vice President of Student Affairs conducted last year.
As we prepared for spring opening, wildfires devastated parts of Southern California, impacting many restaurants, including our franchise partner. Regrettably, due to the impact of the wildfires, Wild Blue’s Spring launch will be partially delayed. However, we are diligently working to open as soon as possible.
Our partners at Wild Blue Sushi are committed to ensuring our campus does not go without. They will provide fresh sushi to-go delivered each morning to Ekho’s Cafe and the Sea Store Market.
Please enjoy sushi classics such as California rolls, spicy ahi tuna rolls and spicy salmon rolls, along with favorites such as crunchy shrimp tempura rolls, rainbow rolls, marina plate with fresh salmon and tuna nigiri, and Hawaiian poke bowls with salmon and ahi tuna. When Wild Blue’s permanent location opens in the Student Union Building later this Spring, we look forward to providing the campus community all of the sushi offerings along with boba and made-to-order poke bowls.
